Kokosanki z powidłami, mniam mniam mniam!

Cześć wszystkim! :) 

Dziś dla odmiany post bardziej kulinarny, jeśli tak mogę rzec. Jakiś czas temu skusiłam się na zrobienie najprostszych na świecie kokosanek - białka, cukier i wiórki kokosowe. Kilka dni temu w pewnej piekarni w Poznaniu zakupiłam kokosanki w wersji, że tak powiem, ulepszonej (na kruchym spodzie i z marmoladą), i były po prostu nieziemskie!! Postanowiłam więc trochę pokombinować z moimi kokosankami i dziś upiekłam takie oto pyszności! Przepis jest naprawdę banalnie prosty, a zrobienie kokosanek nie zajmuje zbyt wiele czasu. :) 



Co potrzebujemy?

Kruche ciasto:
- 300g mąki pszennej
- 200g masła
- 100g cukru pudru
- 2 lub 3 żółtka
- powidła śliwkowe

Masa kokosowa:
- pół szklanki cukru białego (lub brązowego)
- 2 paczki wiórek kokosowych
- 2 lub 3 białka
- szczypta soli 

W tym momencie muszę Wam powiedzieć o kilku czynnościach, na które musicie zwrócić uwagę przy wyrabianiu ciasta, by wyszło naprawdę kruche, a nie półkruche:

1. PROPORCJE! Proporcje mąki do tłuszczu i cukru zawsze muszą być 3:2:1 tzn. 300g maki na 200g masła na 100 g cukru pudru.
2. CUKIER PUDER! Zawsze używajcie do kruchego ciasta cukru pudru, gdyż cukier w kryształkach może spowodować karmelizacje.
3. ZAGNIATANIE CIASTA! Im krócej wyrabiane ciasto, tym lepsze! Wyrabianie ciasto powinno trwać dosłownie chwilę.
4. PRZED UPIECZENIEM CIASTO NAKŁUWAMY WIDELCEM! W przeciwnym razie ciasto może się wybrzuszyć.
Wykonanie krok po kroku:

1. Do miski wsypujemy mąkę i cukier puder. Mieszamy. Następnie dodajemy schłodzone masło, które siekamy i mieszamy nożem, by uniknąć kontaktu ciepłych dłoni z ciastem. Dodajemy żółtka i szybko wyrabiamy ciasto.
2. Ciasto zawijamy w folię spożywczą i wkładamy do lodówki (lub zamrażalnika) na min. 1 godzinę. Im bardziej schłodzone ciasto, tym lepsze. Ja trzymałam 2 h w lodówce.
3. Jeżeli minęła już minimum godzina, wyciągamy ciasto z lodówki i wykładamy nim blachę pokrytą papierem do pieczenia. Ja nie wałkowałam ciasta, choć można to zrobić. Brałam kawałki ciasta i wylepiałam nim blachę.
4. Nakłuwamy ciasto widelcem i wstawiamy do piekarnika nagrzanego do 180stopni na 10 min.

Masa kokosowa:

5. W tym czasie robimy masę kokosową. Wbijamy białka do miski i miksujemy, aż powstanie zbita piana. Następnie stopniowo dodajemy pół szklanki cukru i dalej miksujemy.
6. Odstawiamy mikser i łyżką, ostrożnie mieszając, dodajemy do piany wiórki kokosowe.

7. Po 10 minutach wyciągamy ciasto z piekarnika i odstawiamy na chwilę, by trochę ostygło.
8. Gdy ciasto jest jeszcze letnie, smarujemy je powidłami, a następnie wykładamy masę kokosową.
9. Pieczemy w temp 180st. około 15 min. Musicie obserwować kokosanki. Gdy masa kokosowa pięknie się zarumieni, kokosanki są gotowe.
10. Możemy teraz pociąć ciasto na małe prostokąty, by powstały kokosanki właśnie o takim kształcie, lub jakkolwiek chcemy. 

Smacznego!!! Nie zjedzcie wszystkiego od razu! : D

Woda jak śniadanie!

Cześć wszystkim! :)

Dziś pod lupę ląduje kwestia nawadniania organizmu, a co za tym idzie - woda woda woda! Rozległy to temat jak rzeka, ale postaram się Wam podrzucić kilka najważniejszych (w moim odczuciu) korzyści wynikających z codziennego picia dostatecznej ilości wody.


Moja przygoda (nie ważne jak komicznie to brzmi) z piciem dużej (większej) ilości wody zaczęła się w marcu, kiedy postanowiłam zmienić swoje nawyki żywieniowe o 180stopni - zdrowe żywienie + regularna aktywność fizyczna. Od tamtego czasu piję minimum 2l wody dziennie.
  

Ile pić wody w ciągu dnia? 

Pozytywne działanie wody na nasz organizm jak i jej korzystny wpływ na nasze zdrowie oczywiście nie przyjdzie z dnia na dzień, dlatego ważne jest by pić ją codziennie w ilości min. 1.5l-2l. Dawka dziennego zapotrzebowania jest oczywiście sprawą indywidualną, gdyż zależy od naszego wieku, wagi, aktualnej diety oraz czasu poświęconego na wysiłek fizyczny. Wtedy jej zapotrzebowanie może wynieść nawet 3l dziennie.

 Jak często w ciągu dnia?

  • 2 szklanki po przebudzeniu, by nasz organizm zaczął poprawnie funkcjonować 
  • w ciągu dnia wodę należy pić regularnie, małymi łykami, w przerwach między posiłkami
  • zalecane jest wypicie wody około 20 minut przed posiłkiem w celu spożycia mniejszej ilości pokarmu oraz poprawnego trawienia żywności
  • nie należy pić wody podczas posiłku ponieważ utrudnia to proces trawienia
  • będąc aktywnie fizycznym, należy pić wodę przed, w trakcie, jak i po wysiłku

Dożywotnie skazani na wodę mineralną?

Woda przybiera rozmaite postaci, a jej picie nie musi być wcale takie nudne! Woda to nie tylko ta popularna 'woda mineralna' - znajdziemy ją również w owocach, zupie, herbacie, kawie, warzywno-owocowych koktajlach i pod wieloma wieloma innymi postaciami. Jeżeli macie problem z piciem czystej wody mineralnej, można dodać do niej np. świeżą pomarańczę, cytrynę, limonkę, maliny czy mięte, by nabrała wyraźnego smaku. :)

Przy zakupie wody mineralnej (szczególnie niegazowanej) uważnie przeczytajcie jej skład! Powinna zawierać jak najwięcej składników mineralnych - min. 1000g/l - szczególnie ważna jest zawartość magnezu, która powinna być większa niż 50mg oraz wapnia >100mg. 
 


Powody, dla których warto pić wodę!
 
1. Mniej stresu! Odwodnienie organizmu jest mocno odczuwalne zarówno przez umysł jak i ciało, co może prowadzić do bycia zestresowanym. Należy pić wodę regularnie, by nie dopuścić do stanu odwodnienia (pragnienia).

2. Więcej energii! Zapobiega byciu odwodnionym (zmęczonym), w wyniku czego mamy więcej energii na wysiłek fizyczny = spalanie tkanki tłuszczowej = zrzucanie kilogramów.

3. Mniej kilogramów! - Woda nie zawiera kalorii, a jej picie przed posiłkiem sprawi, że zjemy mniej. Przyspiesza metabolizm. Zaspokaja zarówno pragnienie, jak i głód.

4. Czystszy organizm! - Woda wypłukuje toksyny z organizmu oraz szkodliwe produkty przemiany materii.

5. Zdrowsza skóra! - Woda funkcjonuje jako czynnik nawadniający oraz oczyszczający. Picie wody wpływa na poprawę wyglądu skóry - jest ona nawilżona, jędrna, zdrowsza=młodsza oraz nabiera lepszego kolorytu. Woda również redukuje cellulit.

6. Mniejszy ból! Woda koi zgagę, migrenę, zapobiega bólom głowy oraz pleców.

7. Mniejsze ryzyko wystąpienia nowotworów oraz chorób serca! Ryzyko zachorowania na raka okrężnicy jest zmniejszone o 45%, a raka pęcherza o 50%. Dotyczy to również wystąpienia raka piersi.

8. Poprawa koncentracji oraz pamięci!


Na koniec dodam jeszcze, że jeśli ktoś powiedziałby mi około pół roku temu, że dziś będę pić minimum 2l wody dziennie to chyba popukałabym go po głowie. Aktualnie nie wyobrażam sobie dnia bez wypicia konkretnej ilości wody. Dlatego nie zastanawiajcie się dłużej, odłóżcie sztucznie barwione płyny (smakowe wody mineralne, sztuczne soki i napoje) na bok i pozwólcie mineralnej wodzie zagościć na dłużej (zawsze? :D) w waszej codziennej diecie! Picie wody powinno stanowić tak ważną część dziennego odżywiania jak zjadanie śniadania!

Cleanse your body! Healthy detox smoothie recipe!

 Hi everyone! :)

Today's post is some kind of continuation of what I wrote about a week ago but this time you need to be ready for the smoothie detox! By far this green healthy smoothie pictured below is one of those detoxifying and neutralizing beverages which from time to time every one of us should drink to cleanse the body. They're definitely rich in flavour and nutrients.

cucumber - revitalization
parsley - oxygenation
spinach and mango - nutritional value (high in antioxidants, vitamins&minerals)



INGREDIENTS (for two/three servings)

1 cucumber
1 mango
3 cups baby spinach
3 tablespoons parsley 
almond flakes (optional, for garnish)
1/2 glass of water 

DIRECTIONS

1. Wash mango and all vegetables. Cut mango and cucumber. Chop parsley.
2. Combine all ingredients in a blender. Add 1/2 glass of water (or more if necessary). Whirl until smooth.
3. Pour into a glass and top with almond flakes.

Cleanse your body and enjoy the taste! :)

Healthy gorgeous fruit and vegetable smoothies!

Hi everyone! :)

A few months ago I have opted for introducing some changes in my diet - they were primarily related to consuming healthier foods which obviously include fruits and vegetables. I've been chiefly eating them in the form of side dishes (often salads) and after some time I got bored with it (but it doesn't mean I don't eat salads any longer). I've decided to surf the net searching for some novel uses of serving them and I've found smoothies just ideal ways to get my daily intake of both fruits and vegetables.  :)

Combinations of fruits and vegeatbles in smoothies are limitless and it purely and simply depends on you which ingredients you pick out. Whether you're new to drinking smoothies, (in order not to be disgusted at first) attempt to use equal amounts of fruits and vegetables (or fruits alone - the first recipe below) to get accustomed to the taste. Later on, you can gradually limit the use of fruits and consider making smoothies mainly from vegetables.

Below you can find my three recipes for preparing gorgeous smoothies which I do love to drink very often. As you might notice, I prefer dense smoothies to runny ones but you can obviously add more water (or natural yoghurt/fat-free milk) to make the consistency preferable for you.

1. Pink smoothie. 

  

INGREDIENTS

1 medium banana 
 1/2 cup raspberries
1 cup natural yoghurt
1,4 oz (40g) semiskimmed curd cheese
2 spoons honey
2 spoons wheat bran
1 spoon almond flakes
2 tablespoons rolled oats 

DIRECTIONS

1. Soak rolled oats in hot water until soft.
2. Wash, peel and cut banana and raspberries.
3. Mix fruits, natural yoghurt, curd cheese, honey, wheat bran and soft rolled oats in a blender.
4. Pour into a glass and topped with almond flakes and fresh raspberries.

 


 Enjoy your meal! :)


2. Orange smoothie.


INGREDIENTS

1 medium orange
1 medium banana
4 medium carrots 
pumpkin seeds
still mineral water

DIRECTIONS

1. Wash, peel, cut and mix all ingredients in a blender. Whirl until smooth.
2. Add the amount of water you prefer.
3. Pour into a glass.
4. Topped with pumpkin seeds and enjoy the taste! :)




Of course, you can replace one ingredient with another; for instance, an orange with an apple and the taste will be perfect as well.


3. Red smoothie.


INGREDIENTS

1 medium apple
1/2 cucumber
1/2 medium beetroot
1/4 grapefruit (yellow or red)

DIRECTIONS

1. Wash, peel, chop and mix all fruits and vegetables in a blender.
2. Add the amount of water you prefer to make the consistency good for you.
3. Pour into a glass.
4. Serve with some cucumber slices.

HOMEMADE GRANOLA - Easy and healthy!

Hi everyone! :) 

Sorry for not posting last week but I got soooo much work to do concering my summer exam session at uni. I'm sure that some of you know exactly what such session really means (hard working, hard thinking, not enough sleep and time). Fortunately, it has just come to an end and at last I've got enough time to talk to you! :)

Today's post is a food one - I really want to present you my recipe for making a homemade GRANOLA! Granola is just a mixture of rolled oats, nuts, seeds, dried fruits, honey and melted butter. It's much cheaper (and healthier!) to make granola at home than get it in a supermarket (crunchy muesli in the store is often high in sugar and contains unhealthy oils and fats). 

In addition, it only depends on you which combination you pick out; you can mix your favourite ingredients and enjoy the taste! :)

Please do not feel repelled by this pretty long ingredient list below beacuse most of these things you certainly have in your kitchen. :)


INGREDIENTS (for 10 servings)

30 tablespoons rolled oats 
4 tablespoons almond flakes
4 tablespoons coconut chips
3 tablespoons pumpkin seeds
3 tablespoons sunflower seeds
1/2 cups chopped walnuts 
1/2 cup chopped hazelnuts
1 cup dried cranberry
4 teaspoons cinnamon 
4 tablespoons liquid honey 
2 tablespooons melted butter 


DIRECTIONS 

1. Preheat the oven to 180 degrees F.
2. Combine all dry ingredients (rolled oats, seeds, nuts, flakes, chips, cinnamon) in a large bowl. 
3. Add melted butter and liquid honey. Stir.
4. Spread the mixture in a thin layer on a baking sheet (covered in a parchment paper).
5. Bake until golden and brown (for about 15-20 minutes). Stir the granola with a spoon every 3 or 4 minutes so it will bake evenly.
6. Remove from the oven and place in a large bowl. Add dried cranberry, mix and let cool before storing.


 Granola constitues a perfect grab-and-go snack and an ideal breakfast meal when served with a natural yohgurt or fresh fruits!

You can keep it in a jar up to three weeks but whether you fall in love with it, I assure you it will disappear much sooner than expected. :D

The easiest healthy banana crumpets I've ever made!

As the title suggests, this time I really want to show you my recipe for making banana crumpets. It's both easy and fast. To be honest, during the previous week I made them more than three times because they did so good as an easy, tasty and warm breakfast meal. However, it purely and simply depends on you whether you prepare them for breakfast, dinner, lunch or in the form of a sweet and healthy snack in the midst of the day. 

Preparation does not take you much time so it constitutes a pefect option when you're in a hurry and you're not going to leave home with your stomach being empty. These crumpets are incredibly delicious, stodgy and what is most important, healthy (we do not add any flour).



They can make a good substitute for your daily breakfast routine.


These are with a peach and cranberries but another time I added some fresh strawberries and apricots. Exquisite!

INGREDIENTS (for three crumpets)

1 medium or big ripe banana

2 eggs size M
1-2 tablespoon (s) natural yoghurt
1/2 tablespoon cinnamon (optional)

Canola oil
Favourite fruits - I chose 1 peach and dried cranberries

DIRECTIONS 

1. Peel and cut banana. Put it in a medium bowl, add 2 eggs and mix. Optionally you can add 1/2 tablespoon cinnamon. 
2. Heat the oil in a frying pan and place there prepared mixture.
3. Fry until browned.
4. Place on a plate and topped with natural yoghurt and fresh or dried fruits.
5. Enjoy! :)

Grab-and-go, breakfast or dinner vegetable salad

Sometimes there's no point in making up salads which consist of a wide variety of difficult-to-access ingredients. 

My dad is the best at preparing this delicious vegetable salad which recipe I want to share with you today. I'm definitely not in the same class as my dad but I do my best. :D So far, I've only known this salad from being served on the side and a few days ago I made it for that purpose as well; however I've considered it a perfect breakfast food or grab-and-go snack. What you need are just some common vegetables, fruits and spices which, for sure, everone has in their kitchen. :)



INGREDIENTS

- 1 small cabbage lettuce
- 1/2 parsley (or chives)
- 1 apple
- 2 or 3 medium carrots 
- 2 tablespoons lemon juice
- olive oil 
- 1/2 tablespoon vinegar
- salt, pepper and sugar (to taste)

DIRECTIONS 

1. Remove tough leaves, wash and chop cabbage lettuce. Place it in a big bowl and add a pinch of salt. Put it aside for 25 minutes and let the cabbage soften.
2. Shave one apple and carrots and add them to the salad. Pour two tablespoons lemon juice and stir.
3. Spice with salt, pepper and a pinch of sugar. Pour olive oil and 1/2 tablespoon vinegar over the salad and mix.
4. When the salad is well seasoned, add chopped parsley and mix all ingredients once again.

How to replace sweets? Healthy Desserts Ideas!

It is indisputable that almost everybody loves consuming sweets! It often seems impossible to resist a craving for chocolate, ice cream, cookies and other sweet snacks.The truth is that they are only empty calories: they fail to contain any nutritionial benefits such as minerals, vitamins and protein which our body needs to function properly and effectively.

I read some article about healthy eating a few days ago and the author claimed that water constitutes a perfect substitute for sweets. It sounds a bit ridiculous, isn't it? It's a fact that drinking water has a positive effect on our skin and in general, on our health; nevertheless, I'm sure that there is no such person in the whole universe that would pick out water instead of sweeties. 

However, how can we replace cravings for sweets with other wholesome sweet foods?  I'd love to share with you my three healthy alternatives which I've been using for some time now. They are full of natural fruit's sugars, vitamins and taste incredibly delicious!

1. Strawberry-Raspberry Dessert.
 



INGREDIENTS (for 2 servings)

- 10 strawberries
- 1 raspberry jelly
- 1 tablespoon almond flakes
- 7 oz. natural yoghurt (200 grams)
- 1 piece dark chocolate (optional, for garnish)

DIRECTIONS

1. Wash and peel strawberries.
2. Add 7 strawberries and natural yoghurt to a blender and mix until smooth.
3. Fill two glasses halfway with the mixture and put them aside.
4. Prepare the jelly according to the instructions on the package (but it's better to take 420 ml of water instead of 500ml) and add the remaining chopped 3 strawberries.
5. Place the jelly in the fridge for about 3 or 4 hours.
6. Prepared jelly put at the top of the mixture in the two glassess and place for another hour in the fridge.
7. Remove from the fridge and sprinkle with almond flakes and dark chocolate shavings. Enjoy!




2. Banana-Kiwi Ice Cream.



INGREDIENTS

- 1 banana
- 1,5 kiwi
- 2 strawberries (optional)
- 5 oz. natural yoghurt (150 grams)
- 1/2 tablespoon almond flakes

DIRECTIONS 

1. Wash, peel and slice all fruits.
2. Mix sliced banana, 1/2 kiwi and natural yoghurt in a blender until smooth.
3. Pour into a glass.
4. Add the remaining 1/2 kiwi and place in the freezer.
5. Prepared ice cream remove from the freezer, top with kiwi and strawberry slices and sprinkle with almond flakes. Enjoy!


3. Banana-Peach Rolled Oats Cookies.


INGREDIENTS

- 2 ripe bananas
- 1 peach
- 1 cup rolled oats
- 1 tablespoon honey
- 1 tablespoon cranberry (optional)

DIRECTIONS

1. Peel and slice bananas. Wash and cut peach.
2. Mix bananas, peach and honey in a bowl and put aside for 15 minutes.
3. After that time, add rolled oats and cranberries. Stir. 
4. Mould round cookies and place them on a baking sheet covered with parchment paper.
5. Bake for 20 mins in the temp. 180°.
6. Remove cookies from the oven and put them on an oven shelf to harden and cool down. 
DO NOT place cookies immediately after baking on a plate because then they will soften up by absorbing moisture. Enjoy!
 

  
Obviously, the easiest and most common way to replace sweets is just making a salad by mixing all of our favourite fruits in a small bowl with natural yoghurt and some nuts, seeds or dried fruits. :)


I really hope that you'll use some of my recipies to prepare these luscious desserts instead of spending money on sweet and fatty snacks.

Breakfast ideas - fast, healthy, and easy to prepare

Hiiiii everybody! :)

 As I mentioned last time, I really want to share with you three meals which I prepare for breakfast almost every day and which give me a lot of energy early in the morning. They are full of colour, flavour and what is most important - they are extremely easy and fast to make. All we need are fresh fruits, vegetables and ingredients which for sure everyone has in their kitchen. :)


1. Summer salad with both dried and fresh fruits.




INGREDIENTS

- 1/2 apple
- 1/2 orange
- 1 banana
- 2 dried apricots
- 5 dried cranberries
- 3 tablespoons rolled oats
- 5 tablespoons natural yoghurt


PREPARATION 

Wash, peel and chop fresh fruits. Mix them in a bowl and add rolled oats and natural yoghurt. Place dried fruits on top. 
Done! :)




2. Fresh fruit salad with walnuts and chocolate.


INGREDIENTS

- 1 apple
- 1/2 orange
- 1 handful red grapes
- 3 walnuts
- 3 tablespoons rolled oats
- 5 tablespoons natural yoghurt
- 1 cube dark chocolate

PREPARATION

Wash, peel and chop all fruits. Combine them in a medium bowl and top with rolled oats and natural yoghurt. Finally sprinkle with walnuts and grate a cube of dark chocolate on top. Enjoy your meal! :)




3. Light vegetable salad.


There's nothing easier than making this spring, delicious and healthy salad!


INGREDIENTS

Salad:
- 4 lettuce leaves
- 3 radishes
- 1/2 cucumber 
- 1/2 tomato
- 1/4 small onion
- 2 tablespoons chives
- salt
- black pepper

Dressing:
- 1/3 tablespoon olive oil
- 1/2 tablespoon lemon juice 
- herbs e.g. dry basil and oregano
- water 

PREPARATION

Dressing: combine olive oil, lemon juice, herbs and water in a small bowl. 

Salad: wash and cut all vegetables. Place lettuce leaves on the bottom of a seperate bowl and top with chopped vegetables apart from chives. Flavour with pepper and salt, pour dressing over salad and toss well. Finally add the chives.


Of course, these are only my own choices and suggestions. In salads you can obviously mix fruits and vegetables which you like the most. :)

Photos taken in October

Well well well, here I am. Hello hello! :)

October has just finished so I've decided to share with you some photos which I took with my camera phone throughout the last month.

Hope you enjoy them! :)

To begin with some healthy food that I've preferred lately...

 ...in the morning...

 These rolls were warm the moment I ate them; yummy yummy yummy!

...and in the afternoon.

There's no such tasty salad which is in the same class as my dad's. :)

Okay, this cake fails to be healthy, but I couldn't resist eating it. Only a few pieces. :D




Believe me or not, but one year ago I couldn't stand the smell of coffee, not to mention drinking it. Since last winter session, when I had to study a lot to pass my exams, coffee has become my essential beverage I have to drink every single day. I guess I'm gradually  becoming a coffee lover... maybe I already am.


 Regarding the weather, it has been so perfect in Poznań lately! Such a gorgeous autumn.

Fridays have officialy become those days when the only thing that I do in the evenings is going out with friends. :)
